Dr. Universe: How is ice cream made? – Israel, 7

This updated Ask Dr. Universe column originally published July 7, 2016.Dear Israel,It just so happens that July is National Ice Cream Month. To celebrate, I decided to whip up some homemade ice cream. You can try it at home, too.

Put milk, sugar and vanilla into a freezer bag and seal it up tight. Fill another gallon freezer bag with ice and rock salt. Place the liquid mix bag inside the bag of ice and give it a good long shake. Some scientists might call this part “agitating.” After five minutes or so, you’ll notice the liquid mix in your bag becomes solid. Then you can dig in with a spoon.

After making my own homemade tuna-flavored ice cream, I decided to take a trip to the Washington State University Creamery to see how the professionals make ice cream for Ferdinand’s Ice Cream Shoppe.

I met up with our friend John Haugen, the creamery manager. Each year at the WSU creamery, students make more than 18,000 gallons of ice cream. That’s a lot of scoops.

Just like our ice cream-in-a-bag recipe, their recipe uses a mix of milk, cream and sugar. It’s frozen in a way to prevent crystals from forming and incorporates enough air to make it soft. At the creamery, milk flows through pipes into big stainless steel tanks that have been specially engineered.

The milk the creamery uses comes from cows on Knott Dairy Farm. They’re cared for by students.

The students add a bit of fat to the mix in the form of cream, which gives the ice cream a smooth texture. When the fat mixes with air, it helps create small pockets in the ice cream. It makes the texture smoother. In fact, a scoop of ice cream is about half air.

When making ice cream, we need to keep the ingredients blended together. With all the liquids going in the vat, we also add a few solids like dry milk, followed by sugar. Then, we heat it up to 155 degrees to pasteurize the milk and kill any bad bacteria that might have snuck into the mix.

We also don’t want the cream to rise to the top or different parts to separate. This is where we add in what’s called an emulsifier. One of the original emulsifiers that did the trick was actually egg.

We also want to keep the ice cream from getting too many ice crystals. So, we add in a bit of carrageenan, a kind of seaweed. But it’s just a tiny bit. It helps keep the ice cream from forming those tiny ice crystals.

The liquid goes through a homogenizer, forcing the mix through a small opening and breaking down milk fats into smaller pieces to make the ice cream even smoother.

Finally, the mix goes through a specially engineered machine to bring the temperature down. Then it gets sent through a freezing barrel and packed into boxes. The best part of the job is eating the ice cream, Haugen adds.

That sounds pretty cool to me.

95th Michigan Contemporary Art Exhibition Showcases 150 Michigan Artists From Across the State

MUSKEGON, MI — The 95th Michigan Contemporary Art Exhibition continues a rich legacy of showcasing the work of Michigan artists, from talented beginners to accomplished professionals, at the Muskegon Museum of Art (MMA) from September 26 – November 13. A public reception and awards ceremony will be held on Thursday, September 26 at 5 PM.

The Michigan Contemporary Art Exhibition began in 1929 and is the longest-running juried show of its kind in Michigan. The exhibition presents a look at the issues, themes, and materials inspiring today’s Michigan artists. A visitor favorite, the exhibition engages, challenges, and inspires conversation and allows the public the opportunity to purchase artwork featured in the show.

In its 95th year, the Michigan Contemporary Art Exhibition features 150 Michigan artists from across the state with artwork ranging in media from painting, printmaking, drawing, sculpture, ceramics, textiles, jewelry, photography, installation, and more. Fifteen prizes are awarded to artists with the largest prize being $1,500 for Best of Show. Prizewinners will be announced on Thursday, September 26 during the opening reception and awards ceremony. Most works of art in the exhibition are available for the public to purchase.

Jonathan Thunder, a painter, animator, and contemporary artist of the MMA permanent collection, selected the works in the exhibition this year. Thunder creates paintings and animated films that speak to popular culture, modern society, and his Ojibwe heritage. His work has appeared in local, regional, and national exhibitions and his short films have earned several awards. His paintings and films were included in the 2022-23 MMA curated exhibition Jonathan Thunder: Maamawi and the 2020-2021 exhibition The Art of People: Contemporary Anishinaabe Artists organized by the Muskegon Museum of Art and Grand Valley State University Art Gallery (with guest curator Jason Quigno).

A public opening reception and artist award ceremony will be held at the Muskegon Museum of Art on Thursday, September 26 at 5 PM.

Maritime Museum Lecture Series Features Life Saving Service History

South Haven, Michigan – The Michigan Maritime Museum lecture series kicks off with renowned
maritime historian and author Fred Stonehouse on Wednesday, September 25th at 6:30 PM.
Stonehouse’s presentation, Forgotten Heroes, The U.S. Life-Saving Service on the Great Lakes,
will focus on the period from 1874 until 1915 after which the U.S. Life-Saving Service merged
with the Revenue Cutter Service and became the U.S. Coast Guard. The men of this remarkable
organization displayed incredible courage and bravery in rescuing over 55,000 people from
potential death on the Great Lakes. Despite personal danger or difficulty, the life-savers
invariably accomplished the rescue. The presentation is their story of courage in the face of
nearly insurmountable odds. Their unofficial motto was, “Regulations say we have to go out,
they say nothing about coming back.” Learn the inspiring tales of these rescues and heroes not to
be forgotten.

“We look forward to having Fred Stonehouse present at the Museum on such a compelling
topic,” said Director of Education & Programs Ashley Deming. “This lecture is a perfect
complement to the Coast Guard and Life-Saving Service history we share through our exhibits
and is especially appropriate as we host the US Life-Saving Service Heritage Association
Conference the same week.”

Fred Stonehouse has authored over thirty books on maritime history, many of them focusing on
the Great Lakes. Wreck Ashore, the U.S. Life-Saving Service on the Great Lakes, won a national
publishing award and is the predominant work on the subject. Stonehouse teaches maritime
history at Northern Michigan University and is an active consultant for numerous maritime-oriented projects and programs.

This lecture series is made possible thanks to the Nielsen-Wells Grant Fund and Mike and Susan

A work session of the Fruitport Charter Township Board began at 6:30pm on Monday, August 26, 2024, in the township board room.

Members Present: Todd Dunham, Supervisor; Andrea Anderson, Clerk; Rose Dillon, Treasurer; Trustees Jim Fichtel, Greg Hulka, Terry Knoll, David Markgraf Members
Absent: none

At 7:00pm, Todd Dunham opened the regular meeting with the Pledge of Allegiance.
Also Present: 3- residents; 1- employees; 1- guests; DPW Director, Steve Biesiada; Public Safety Director, Brian Michelli.

The motion by Terry Knoll, seconded by David Markgraf was carried unanimously, to approve the minutes of August 12 and August 15, 2024 as presented.
The motion by Andrea Anderson, seconded by Todd Dunham was carried unanimously, to approve the agenda as presented.


CORRESPONDENCE / REPORTS:

  1. Steve Biesiada shared that the Cleveland Rd project will be breaking ground this week; the new employee
    is doing well.
  2. Brian Michelli reported that the Police Department is at full-staff; the community slip ‘n slide as well
    attended and the Lion’s served 500 hot dogs.

drainage purposes of an adjacent parcel.

On August 20, 2024, the Planning Commission made a recommendation to the Township Board to approve the zone change from R-2 Single Family Duplex District to the PUD (Planned Unit Development) District for parcel number #61-15-127-300-0003-00 or 6420 S. Harvey St, Muskegon, MI 49444.
This constitutes the first reading. Final action will take place at the next regular scheduled board meeting on September 9, 2024.

That’s right! If more than 100 households or small businesses enroll in Natural Gas Balance, DTE’s voluntary cleaner energy program, the company will plant new trees in Muskegon County this fall. Natural Gas Balance helps support the development of Michigan-made renewable natural gas and promotes sound forest management in our state.

As fall approaches, anticipation builds for one of West Michigan’s favorite events: the Silver Lake Sand Dunes Apple BBQ Festival. Scheduled for September 6-7, 2024, this annual celebration draws visitors from across the state and beyond. Set against the backdrop of the Silver Lake Sand Dunes, this festival offers a mix of tasty barbecue, fresh apples, and a variety of family-friendly activities.


Friday, September 6th, 2024: A Flavorful Kickoff
The festival kicks off on Friday afternoon from 2:00 pm to 9:00 pm. with 20 different vendors showcasing smoky barbecue ribs and pulled pork sandwiches, homemade apple pies, kettle corn, and more.

From 2:00 pm to 7:00 pm the festival’s Family Fun Zone provides a variety of activities including classic yard games, a blow-up castle, a rock-climbing slide, and face painting. Kids can also enjoy gelly ball, a petting zoo, ride a pony, and a children’s entertainer creating balloon animals and caricatures.

Adults, whether you’re in the mood for a cold craft beer or a crisp glass of wine, you can unwind at the Beer & Wine Tent and enjoy the festival both days.

Friday afternoon the Festival Stage comes alive with country music performers, Tweed & Dixie from 6:00 pm to 9:00 pm. Tweed & Dixie describe their music as meeting somewhere between Waylon and Whitesnake. Their sound has been crafted from growing up in the working class, grease-driven Motor City Madhouse and running the backroads of Great Lakes country.

Saturday, September 7th, 2024: A Full Day of Festivities
Saturday is a full day of activities, beginning with the Apple A Day 5K Run/Walk. Registration starts at 8:00 am at Mac Woods Dune Ride. Kickstart your day with a run/walk while taking in the scenic beauty of the area.

The Arts & Crafts Show, 10:00 am to 5:00 pm, is a must-visit for those who appreciate handmade goods. The show features a wide range of crafts, including jewelry, woodworking, and artwork.

The Family Fun Zone continues on Saturday with fun-filled activities for kids of all ages. Throughout the day, enjoy forge demonstrations, grilling seminars and the Muskegon Axe Throwing booth.

All 20 food vendors are back in action from 10:00 am to 9:00 pm, serving up delicious food throughout the day with plenty of options to satisfy your cravings.
Car and off-road vehicle enthusiasts won’t want to miss the Chicken Shack Classic Vehicle & ORV Show, taking place from 10:00 am to 2:00 pm at Dunetown Mall. This juried event showcases a range of classic cars and off-road vehicles. Participants can register their vehicles at applebbqfestival.com.

For those with a passion for baking, the Apple Pie Contest is a highlight of the day. Pie check-in begins at 11:00 am, and the awards ceremony starts at 12:30 pm.

Historic Marshall Home Tour Weekend Highlights September 6-8, 2024

Marshall, MI – The Marshall Historical Society is excited to present the 59th Annual Home Tour, “Every House Has a Story”, the weekend of September 6-8, 2024. This year’s tour features six private homes, including one which was a former schoolhouse and another which was a township hall, in addition to the Catholic rectory, the Episcopal Church, and a sneak peek at a farmhouse museum undergoing renovation. Other events include a concert at the Brooks Memorial Fountain, Art at the Museum art fair, River District Market, children’s activities, a pub crawl, admission to several museums, and more. This is a self-driving tour with many homes and activities within walking distance of downtown.

  • Join the “History of Your Home” Workshop at 5:30 PM at the Choose Marshall Welcome Center (323 W Michigan Ave at the Fountain Circle). The project includes Mt. Garfield Road from Maple Island Rd to the cul-de-sac: approximately 0.505 miles (1000’) of ditching, prime and double seal, pave cul-de-sac prior to chip seal. The total cost for the project will be $74,000.00 with the MCRC responsible for $24,666.67, Sullivan Township responsible for $24,666.66, and Fruitport Township responsible for $24,666.66. The Fruitport Township residents with road frontage along the affected portion of Mt. Garfield Rd have agreed to pay half of the Township’s portion out-of-pocket up front, leaving Fruitport Township responsible for $12,333.33. Funding source will be decided at a later date.

Rose Dillon moved, Greg Hulka seconded, MOTION CARRIED, to approve the Muskegon County Road Commission contract for Mt. Garfield Rd.

24-081 Cemetery Scatter Garden Project Approval
The Pine Hill Cemetery is nearing a sold-out status with no room for expansion. A scatter garden would provide an area for families to scatter ashes on the edge of the heavily wooded ravine and place the name of the deceased on a memorial wall. This would include a concrete patio with necessary reinforcements and a walkway from the roadway. This project was planned for in the current budget.

Todd Dunham moved, Terry Knoll seconded, MOTION CARRIED, to approve the project with the cost not to exceed $25,000.00 as budgeted.
